'FILLY' CHEESESTEAK
Twist on a Classic Sub Sandwich
Ingredients (Yield: 2-4 Servings)
A Long French bread or baguette (the bread should be as fresh as possible)
Good Pepper Jack cheese slices (use as many slices as you want)
1 pound of thinly sliced beef (ribeye is best)
2 TBS of oil, I use olive oil
1/4 cup of light soy sauce
1 tsp of garlic powder
1 tsp of black pepper, the course ground kind is best
1/2 tsp of salt
1/4 tsp of red chili powder
1 small sweet onion, sliced into ¼ inch thick pieces
1/3 cup of pickled banana peppers along with a couple of tablespoons of the vinegar brine from the jar

Method:
Preheat the oven to 350 degrees F because the sandwich should be baked once assembled.

Cut the French bread down the middle lengthwise but be sure not to cut it all the way through to the other side. The bread should be connected or the meat will fall out when eating.

Next, add a thick layer of Mayonnaise on both sides of the bread-this will help the bread from getting soggy from the meat juices, but will also keep it from drying out.
Then, add half slices of Pepper Jack cheese to either side the bread. The meat filling will go in the middle of the cheese so that when the sandwich is baked, the bread can get a little crusty on the outside and the cheese and the filling will be melty and delicious.

Tear the meat into chunks (if using processed cheese steak meat slices) before frying it so it cooks more evenly. Then, heat the oil in a large pan on med high. Add the beef, along with all the dry spices and soy sauce.
Continue frying the meat for a couple of minutes before adding onions. Let the onions and the beef get a little caramelized and then add the banana peppers. Fry for another couple of minutes and then add a little of the brine or pickling juice from the banana peppers. This will pick up any of the crispy bits and deglaze the pan, while adding a light tang to balance the flavors. Fry for another minute, before moving the pan off the heat.

Cool the mixture for around 5 minutes so it’s not piping hot before filling the bread. Lay out of the bread on a long piece of foil to loosely wrap it and then bake the cheesesteak for around 10 minutes.
Remove and it cool it for just a couple of minutes before eating it.
